Range Hoods
DCS introduced a new line of pro-style range hoods featuring several
improvements to the line it replaces including curvaceous styling, hidden fasters, an
integrated IR warming system, and an interesting mechanical knob
layout angled down from the bottom side of the hoods. Some models also
featured an unusual low-profile baffle filter design. Range hoods are available
in 12" and 18" heights, and wall and island configurations.
Available 3rd Qtr. Forgive the photography.

A Cool Grill Light
DCS one upped Dacor's clever BBQ light which itself was awarded an ApplianceAdvisor
Best of Show in 2001. The DCS version places a 50W halogen light
integrated into the rotisserie motor, safely outside the grill canopy, outside
the hell of heat, smoke and grease the Dacor light calls home. The DCS solution is simple, and
answers the obvious problems with the Dacor design. We wonder what we
were thinking in 2001. Capital Equipment in their new BBQ light design,
followed Dacor into the abyss.

Not To Worry, You Don't Have to Pick Them Up
The new DCS 27" and 30" double and single electric ovens are heavy, built with
ample portions of 18 gauge steel for, we assume, increased thermal mass and more even temperatures,
a strategy also followed by Viking. DCS says that their new oven design
(and weight) are the result of considerable benchmarking against the competition
and reaching their own specified cooking performance.
A weight comparison of similar 30"
single and double ovens:
| Weight comparison | 30" Double Oven | 30" Single Oven |
| DCS | 436 lbs | 246 lbs |
| Viking Designer Series | 402 lbs | 261 lbs |
| Dacor Millennia Series | 337 lbs | 219 lbs |
| Thermador S-Series | 330 lbs | 165 lbs |
| GE Monogram European | 304 lbs | 178 lbs |
Somewhat longer preheat times are a possible
downside of the added weight, but we have no data for comparison. The DCS ovens feature
convection, self clean, meat probes, sealed glass broiler and roller racks.
Available in stainless steel, white and black. The 30" ovens have a 4.3 cu
ft capacity, the 27" ovens have a 3.8 cu ft capacity. The black and white prototypes on
display at KBIS showed a slight "orange peel" texture that we hope has been
eliminated for production.

DCS Shuts the Hatch
Sealed burners on pro ranges and cooktops though there is 1 economy version remaining
with open burners.

5th Super Burner Where Once There Were Only 4
New 5 burner 48" Pro range with 17" griddle. (4) burners at
16K BTU, (1) burner at 17.5K BTU. Griddle has 2 tubular burners.
New 5 burner 30" all gas Pro range. (4) burners at 16K BTU, (1) burner at 17.5K
BTU.
All units feature a new simmer system called a "dual flow burner", a
ceran glass broiler, and a 5
hour self cleaning system with auto lock.
DCS claims that the "Dual Flow technology (is) capable of simmering at 140 degrees". The Advisor
thought to himself, "I was born in the day, but I wasn't born
yesterday". If DCS is trying to
indicate that the burner keeps foods at 140 degrees without a temperature probe, then they are guilty of
distributing an oxygen
deprived statistic. To attain the 140 degree steady state temperature, the
food and pot must radiate off exactly the energy put into it by the simmer
system. The Red Sox are more likely to win the Super Bowl than you are of getting the pots and food mass
balanced at 140F to the1200 BTU input by the simmer
system. Marketing, marketing,
marketing.
Though we don't like the marketing, we do the like the unit, and so did K&B Business Magazine
who said
in their December 2001 issue: "They selected the Dynamic Cooking Systems (DCS)
30" gas range as the first place overall winner because the technological
achievement of compact size and a fifth burner allows avid cooks to have
professional-style capabilities and looks in a range that fits into the same
space as a standard-sized unit."

A Not So New Dishwasher
DCS sources a Smeg dishwasher with a stainless interior and an amusement park ride of a spray
system. At the end of one spray arm
pivots a secondary mini-spray arm. Why all this complexity and humor in
the face of physics? Maybe it works? DCS also claims a noise level
of 49 dB on this Energy Star rated unit.
